Broccoli Casserole

Preheat oven to 400.

Gently steam 2 boxes frozen chopped broccoli just until it starts to get tender.

Drain the broccoli into an oven-proof glass dish.

Add and mix well:

  • 1 can condensed cream of chicken soup
  • 1/2 C. mayonnaise
  • 1 egg
  • salt and pepper

Melt 2 sticks butter.

Coat 2 C. bread crumbs with the butter, tossing gently with a fork.

Sprinkle 2 C. shredded cheddar cheese over the broccoli mixture.

Sprinkle the coated bread crumbs over the cheese, covering the cheese completely so it does not burn in the oven.

Bake for 1 hr. or until the filling is crumbly, not liquid.

Serve warm.
